Heather Tips were used in the days prior to hops to impart a pleasant aroma and smooth bitterness to the beer. Mostly associated with Scottish ales, Add 2 ounces at the beginning of the boil. They can also be added with 15 min left in your boil to impart a bright, floral note. Heather Tips are complimented well with honey and sweet gale.
