Specs
The US release of this highly-anticipated dry yeast selected for wheat beer fermentations. WB-06 produces estery and phenol notes typical of Bavarian-style wheat beers. Optimum temp: 59°-75° F.
Home Brewer
Used this for a Hefeweizen that was designed to be around 4.3% ABV. The recipe was formulated in BerrSmith, witch lists the attenuation rage as 66%-70%. Don't believe that if you use BeerSmith. This yeast is a beast. After more research, I found that Fermentis lists it as a max attenuation of 86%. My Hefeweizen that was supposed to be ~4.3% went fom an OG of 1.049 to a FG of 1.008 for an 83% apparent attenuation, and is now a 5.4% beer. I can't fault the yeast for this, but be warned that you may have a way lower FG than you though if you use BeerSmith for recipe formulation. It does produce good clover and banana flavors typical of a Hefe, so it has that. I would say it is a good yeast, but definitely an over achiever. I will probably use something else the next time.
