Prise de Mousse strain. The 'original' steady, low-foaming yeast, great for fermenting must with lots of suspended pulp, and good for barrel fermentations as well. Great at low temperatures and flocculates well. Has been called the â€œyeast of choiceâ€ for apple cider.
