PROCESS 2-day steep -> 3-4 day germination -> 20h kiln -> cured at 80°C

This corn hails from Yadkinville NC where a single family grows this variety of food-grade popping corn. It has a brilliant yellow shine, and tastes of fresh June sweet corn on the cob (if you haven't had that, you'll have to visit us here at the shop for a cookout!) Because the corn was kilned above the gelatinization point, the extractable sugars are more readily available; this corn is much easier to work with than its raw counterpart which would require the employment of a cereal mash.

This is NOT flaked corn; it is crushed like other grains. We can mill this product but it will come out as more of a coarse powder unless it is in a recipe mixed with other grain.
