Juniper Berries are the principal flavoring in gin. Juniper has been used In porters, stouts and doppelbocks as well. Use 1/2 - 1 ounce in the boil. The flavor is very compatible with rye beer, and blends well with the citrus notes of ginger and orange peel, as well as and coriander. Crush berries before using to release the aromatics and flavors within the berry. The berries are also delicious in sauces and marinades for game dishes. Note: Use of juniper is cautioned for pregnant women or anyone with kidney problems.
